Elena, when the evening rush begins, how do you keep yourself organized?
Elena Morales: Preparation starts long before the first guest sits down. By five o'clock, our silverware is polished, our tables are aligned down to the millimeter, and we have memorized the evening specials along with every single ingredient for allergy safety. Once seven o'clock arrives, the restaurant fills up instantly. The secret to surviving that rush is prioritizing tasks through mental triage. I constantly scan my section, grouping tasks together. If table four needs water, table six needs their check, and table two is ready to order, I plan my steps so I never walk across the floor empty-handed. In the hospitality industry, we call this maintaining a rhythm, and losing that rhythm can throw off your entire night.
