Bacon’s Journey: From Processing to Safe Storage

A sealed package of bacon sits on a refrigerator shelf. Before it reached that shelf, it passed through several steps designed to prepare, package, and transport it. What happens along the way, and why does keeping it cold still matter?
Processing and preservation
Bacon is commonly made from pork, though some products are made from other meats. At a processing facility, workers prepare the meat and may use a method called curing. Curing uses ingredients such as salt to change the meat and help slow the growth of some harmful microbes. Microbes are tiny living things, including bacteria, that are too small to see without special equipment.
Some bacon is also smoked. Smoke can add flavor and help preserve the meat. Processing methods differ, however, so two packages labeled “bacon” may not have been prepared in exactly the same way. Curing or smoking does not automatically mean a product is ready to eat. Some bacon must be cooked, while other bacon is sold fully cooked. The package provides important information about that specific product.
