Interviewer: Every autumn, our town's annual Harvest Heritage Festival attracts tens of thousands of visitors, and a centerpiece of the celebration is the traditional cinnamon-sugar sweet bread. Today, we are sitting down with Marco Morales, head baker and co-owner of Sunflour Bakery, who is tasked with producing over eight thousand loaves in just five days. Marco, thank you for taking time out of your intense schedule to speak with us.

Marco Morales: It is my absolute pleasure! Believe it or not, sitting down for twenty minutes feels like a luxury right now. My team and I have been on our feet since three o'clock this morning.

Interviewer: Eight thousand loaves sounds like an astronomical number for an independent neighborhood bakery. How far in advance do you actually begin preparing for this festival?
