What Makes Texas Chili Special?
Texas chili is different from chili you might find in other places. First, it's all about the beef. Instead of ground beef, real Texas chili uses chunks of high-quality beef, called the "chili grind". The sauce isn't made from chili powder but from dried chiles, like Ancho or Guajillo, that are soaked in water to bring out their rich flavors.
